Buttermilk Biscuits

Ingredients:

  • 3 cups flour
  • 2 ½ tablespoons sugar
  • 1 ½ tablespoons Baking Powder
  • 1 teaspoon salt
  • 8 tablespoons cold, unsalted butter, diced
  • ¾ cup buttermilk
  • ½ cup whole milk


Optional:

  • ¾ cup grated cheddar cheese


Directions:

1.      Sift all dry ingredients together

2.      Cut the butter into the dry ingredients until it forms pea-sized pieces.

3.      Form a well inside the bowl.

4.      Add the buttermilk and milk into the center of the well and fold the dry ingredients into the milks with a wide spatula – just to combine until it forms sticky dough.

5.      Optional: fold cheese into dough

6.      Roll the dough into a 1-inch rectangle and fold it (like a book).

7.      Turn the dough 90 degrees to the left, roll and fold again.

8.      Turn the dough one more time and fold it again.

9.      Roll one last time, maintaining the rectangular shape and chill for about one hour.

10.  Preheat oven to 375 degrees

11.  Line a baking sheet with parchment paper

12.   Cut the biscuits into rectangles of the same size

13.  Bake until golden brown.

14.  Let cool on wire racks.



Because the dough is folded, like puff pastry, they puff up when baked.  These biscuits are layered, flaky and really buttery.
