Sunday Dinner in June
When I made chicken stock Friday night, I reserved the meat from the chicken. So, for dinner tonight, I made Chicken pot pie.
First, I shredded the chicken and made sure there were no bones left. Then I began the sauce by making a velute (a roux with added chicken stock) then I added some cream, seasoned it with salt, pepper and paprika. I added the shredded chicken, some blanched peas, carrots and corn kernels and set aside. I put the chicken mixture in a cassarole, topped it with a pie crust (homemade of course), brushed the top with egg, and baked it in a 400 degree convection oven for about an hour.

I will also make a salad with homemade honey dijon vingagrette.
For dessert, I sliced some strawberries and added raspberries to a large bowl. Seperately I whipped some fresh cream with a bit of sugar. I'll serve the berries and cream in individual cups after dinner.
My neighbors helped me with some yardwork and took me to the mechanic to pick up my car, so they will come over for dinner.
