Wild Mushroom Madeira Sauce


Ingredients:
• 1 lb morels
• 1 lb chanterelles
• 1 lb blue foot mushrooms (or creminis)
• 1 ½ cups Madeira wine
• 1 cup sherry
• 1 tablespoon balsamic vinegar
• 2 shallots, minced
• 2 cloves garlic, minced
• 2 cups veal stock
• 1 teaspoon tomato paste
• 1 ½ teaspoons salt
• ½ teaspoon black pepper

Directions:

1. In a saucepan, combine shallots, garlic, salt pepper and vinegar and reduce by one third
2. Add wine and sherry and reduce by half
3. Add veal stock and mushrooms and tomato paste, then simmer slowly (low heat) for about ½ hour to 40 minutes(reducing by one third).
4. Taste for seasoning – add more salt and pepper if needed.
5. Serve
