Honey Scones w/ Orange Marmalade Butter
I modified this recipe from one I learned at Chef Central in a live demo several years ago
Ingredients:
- 2 cups flour
- 1/4 tsp salt
- 2 tsp baking powder
- 1 tsp baking soda
- 3 oz butter, cut into small pieces
- 1 egg
- 3 tbsp honey
- 1/2 cup buttermilk
Method:
- Preheat oven to 425 and line a baking sheet with parchment paper, then grease the parchment paper
- Sift all dry ingredients, then and pulse together in a food processor
- Add the butter and mix until the mixture resembles course crumbs
- Add the egg, honey and buttermilk
- Mix the dough just until the dough comes together
- The dough can be rolled out and cut into triangles or circles or dropped onto a sheet
- Bake for 15-20 minutes.
- Serve warm, topped with orange marmalade butter and clotted cream
Orange Marmalade butter:
- One stick of softened butter
- 2 tbsp orange marmalade
- Place softened butter into a small bowl and whip in the marmalade.
- Roll into a 1 1/2 inch diameter log within wax paper or parchment and refridgerate until use.
