Honey Scones w/ Orange Marmalade Butter

I modified this recipe from one I learned at Chef Central in a live demo several years ago

Ingredients:

  • 2 cups flour
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3 oz butter, cut into small pieces
  • 1 egg
  • 3 tbsp honey
  • 1/2 cup buttermilk

Method:

  1. Preheat oven to 425 and line a baking sheet with parchment paper, then grease the parchment paper
  2. Sift all dry ingredients, then and pulse together in a food processor
  3. Add the butter and mix until the mixture resembles course crumbs
  4. Add the egg, honey and buttermilk
  5. Mix the dough just until the dough comes together
  6. The dough can be rolled out and cut into triangles or circles or dropped onto a sheet
  7. Bake for 15-20 minutes.
  8. Serve warm, topped with orange marmalade butter and clotted cream

Orange Marmalade butter:

  • One stick of softened butter
  • 2 tbsp orange marmalade
  1. Place softened butter into a small bowl and whip in the marmalade. 
  2. Roll into a 1 1/2 inch diameter log within wax paper or parchment and refridgerate until use.
