Beet Apple Salad

This is one of my favorite fall salad recipes.  it is crisp and refreshing — and complements almost any meal.

Beet Apple Salad

Ingredients:
•    Two large beets, peeled and cubed
•    1 golden delicious apple, peeled and cubed
•    1 radish, small dice
•    Two tablespoons black mint, minced
•    Teaspoon olive oil
•    1 lemon, zested and juiced


Directions:

•    Cube the beets prior to cooking
•    Steam the cubed beets until tender – then shock and cool down
•    Combine the minced mint leaves with the apples, lemon zest, radish, cooled beet cubes and olive oil
•    Add salt and pepper to taste

    Wow. this looks and sounds really good! I'm going to have to try it while I'm here with my family. This seems like something that would go really well with roast pork, a good steak or perhaps even that lamb you had at the brewery this past weekend. Thanks again for sharing!
